My Trail Mix Bars are full of only the highest quality ingredients to keep your energy flowing - raw nuts & seeds, plant protein, coconut oil, dried cranberries.. and it's hard to find this in any store bought mix or bar! Most are made with lots of added sugar, salt, and roasted nuts, which don't contain the same healthy fats and nutrients as raw or sprouted nuts.

These tasty bars take just a few minutes to throw together and are NO BAKE, so they are a great snack recipe to add to your collection ;)

Chill Time: 30 minutes
Makes: 6 bars

Ingredients:
  • 1/2 Cup Raw or Sprouted Almonds
  • 1/2 Cup Raw Cashews
  • 1/2 Cup Raw or Sprouted Pumpkin Seeds
  • 1/4 Cup Dried Cranberries
  • 1/2 Cup Shredded Coconut
  • 1/8 Tsp Himalayan Salt
  • 1/4 Cup Plant Protein (I used Brown Rice Protein)
  • 2 Tbsp Coconut Oil
  • 1/4 Cup Almond Butter
  • 2 Tbsp Pure Maple Syrup
  • 1 Tsp Vanilla

Instructions:

Line bread pan with parchment paper.

Add almonds, cashews, pumpkin seeds, and dried cranberries to food processor and pulse to form small chunks. Don't over process. Pour chunks into mixing bowl and add coconut, salt, and protein. Stir to evenly blend.

Over low heat, melt together coconut oil, almond butter, maple syrup, and vanilla. Remove from heat and pour over nut mixture. Stir to form sticky mixture.

Press into bread pan and place in freezer 30 minutes to set. Remove from freezer and cut into 6 bars.
