If you love that spicy sweet flavor of cinnamon as much as me then you can't live without this no bake Snickerdoodle Freezer Fudge. A perfect chilly treat to get you through these hot summer months!
Ceylon Cinnamon pairs with almond butter, coconut oil, and vanilla to make the perfect melt in your mouth morsels. Make sure to use Ceylon Cinnamon as opposed to Cassia Cinnamon to get all the amazing superfood benefits of cinnamon - such as stabilizing blood sugar and blood pressure, reducing inflammation, improving circulation and heart health, and fighting cancer.
This nutrient rich fudge is light on carbs and sugar, with no refined sugars or processed fats, but you would never know from the amazing taste! Truly a guilt-free indulgence that you can enjoy every day ;)
Gluten Free, Grain Free, Low Carb, No Bake
Prep Time: 5 minutes
Chill Time: 20 minutes
Makes: 8 fudge cups
- 1/4 Cup Almond Butter
- 1/4 Cup Coconut Oil (soft or melted)
- 1/4 Cup Vanilla Protein (I used a grass fed whey protein)
- 1 Tbsp Pure Maple Syrup
- 1 1/2 Tsp Ceylon Cinnamon (note: if using cassia cinnamon, I would start with less as it is spicier)
- 1/2 Tsp Vanilla
- Dash Sea Salt
Line a cupcake pan with 8 cupcake liners (or use a silicone mold).
Combine all ingredients in small mixing bowl. Stir until smooth and evenly mixed. Pour batter into cupcake molds and place in freezer to set, about 20 minutes.
Remove from freezer and enjoy! Store in fridge or freezer.
