Samoa Shortbread Bars


Ever since I was a child my favorite Girl Scout cookies have always been the Samoas. That coconut, caramel, shortbread, and chocolate combination gets me every time. But I never let myself buy them anymore because they are full of unhealthy trans fats, corn syrup, and other highly processed/artificial ingredients.

That’s why I was so excited when I created these sinfully delicious coconutty caramel Samoa Shortbread Bars that are free of refined sugar, gluten, and grains, and are full of only healthy fats from coconut oil and my sprouted Claire's Goodness almond butter. Vegan too!

These amazing bars are very easy to make just keep in mind they do take a little patience allowing the layers to solidify. You’ll be anxiously counting the minutes until these treats are ready to eat ;)

Bake Time: 20 minutes
Freeze Time: 30 minutes
Makes: 16 bars
Paleo, Gluten Free, Vegan



    • 2/3 Cup Coconut Flour
    • ¼ Tsp Sea Salt
    • 1/3 Cup Coconut Oil
    • 3 Tbsp Maple Syrup


Chocolate Drizzle:
    • ¼ Cup Dark Chocolate
    • 1 Tsp Coconut Oil

SHORTBREAD: Preheat oven to 350 F and line 8 x 8” baking pan with parchment paper. Blend coconut flour and salt then mix in coconut oil and maple syrup to form smooth dough. Press into lined baking pan with your hands to cover the bottom. Bake 12-14 minutes until golden brown. Place in freezer to cool.

CARAMEL: While shortbread is cooling, toast coconut on medium heat until golden brown. Remove from heat and set aside. Melt the rest of the ingredients together in a saucepan over low heat until blended and smooth. Mix in toasted coconut then pour over cooled shortbread. Place in freezer to set, about 20-30 minutes. Cut cooled bars into 16 squares.

CHOCOLATE: Melt dark chocolate and stir until smooth. Add coconut oil as needed to achieve thinner consistency for drizzling. Drizzle thinned chocolate over bars. Freeze 10min to set then enjoy!

Store in fridge or freezer.
