I have a confession to make...

I’m addicted to caramel 😳 Caramel candies, caramel sauce, salted caramel, you name it.

It was always my favorite treat growing up and still owns that place in my heart today, but I don't feel good when I eat traditional caramel full of dairy and refined sugar.

That’s why I was so excited when I created these 5 INGREDIENT, dairy free, vegan, and paleo friendly Salted Caramel Truffles that taste every bit as decadent as the real thing! Rich, creamy caramel encased in a thin layer of dark chocolate and set off by sea salt 🤤

These bite sized beauties are beyond simple to make and will become a favorite indulgence of everyone in your circle.

Chill Time: 40 minutes
Makes: 12 bites
Gluten Free, Paleo, Vegan, No Bake

  • 1/4 Cup Almond Butter
  • 10 Medjool Dates
  • 3/4 Tsp Vanilla
  • 1/4 Tsp Sea Salt + extra to sprinkle on top (I love to use coarse ground salt on the top to have larger chunks, but fine sea salt works too!)
  • 1/4 Cup Chocolate Chips (I use Enjoy Life dairy free chocolate)
  • 1/2 Tbsp Coconut Oil


Line baking sheet with parchment paper. Add almond butter, dates, vanilla, and sea salt to food processor and pulse into smooth dough forms. Roll into tablespoon size balls and place in freezer for 30 minutes.

Melt chocolate chips with coconut oil. Coat chilled caramel bites in melted chocolate and sprinkle top with sea salt. Place back in freezer 10 minutes to set. Store in fridge or freezer.
