With St. Patrick’s Day on deck this week, I was inspired to create a delicious green treat to celebrate with! My Key Lime Pie Bars are bursting with flavor and contain 2 secret green superfood ingredients besides limes.....

PUMPKIN SEEDS in the crust & AVOCADO to give the filling that beautiful light green color!

Now before you turn away, let me say I am generally not a fan of avocado based desserts - it always sounds like a great idea but it’s hard to disguise the flavor!

These bars are the first recipe I have created where I honestly don’t taste the avocado, just the creamy, tangy sweet taste of Key Lime filling. But you still get all those amazing nutrients from the avocado - it’s a win win!

Healthy eaters and health food skeptics alike will love these key lime bars - no one need ever know how healthy they are ;)

Prep Time: 15 minutes
Chill Time: 2 hours
Makes: 8 bars

Ingredients:

Crust:
  • 1/4 Cup Almond Butter
  • 1/2 Cup Raw or Sprouted Pumpkin Seeds
  • 2 Medjool Dates (pitted)
  • 1/8 Tsp Sea Salt
Filling:
  • 1 Avocado
  • 1 Cup Coconut Cream (chilled overnight)
  • 1/2 Cup Pure Maple Syrup
  • 1/4 Cup Fresh Lime Juice
  • 3 Tbsp Coconut Oil (soft or melted)
  • 2 Tbsp Grated Lime Zest
  • 1 Tsp Vanilla
  • Dash of Sea Salt

Instructions:

Line bread pan with parchment paper. Add crust ingredients to small food processor or blender and pulse until crumbly dough forms. Press dough in lined pan to cover the bottom and place in freezer.

Add filling ingredients to blender and blend until smooth batter forms - consistency should be like pudding. Pour over chilled crust and place back in freezer about 2 hours to set.

Remove from freezer and cut into 8 squares. Store in fridge or freezer depending on desired consistency :)
