Paleo, Gluten Free, Vegan, No Bake
- 1/4 Cup Claire's Goodness Almond Butter
- 1/2 Cup Raw Sprouted Pumpkin Seeds
- 2 Medjool Dates (pitted)
- 1/8 Tsp Sea Salt
- 1 Cup Raw Cashews (Soaked overnight)
- 1/2 Cup Coconut Cream (Full Fat)
- 2 Tbsp Coconut Oil
- 2 Tbsp Pure Maple Syrup (Dark)
- 2 Tbsp Fresh Lemon Juice
- 1/2 Tbsp Lemon Zest
- 1/2 Tsp Vanilla
- 1/8 Tsp Sea Salt
- 20 Drops Vanilla Stevia
- 1/4 Cup Raspberries
- 1-2 Tsp Pure Maple Syrup (Dark)
Crust: Line bread pan with parchment paper. Combine all crust ingredients in small food processor until crumbly dough forms. You may have to stop a few times to scrape down the sides. Press dough into bottom of lined pan to create thin crust. Place in freezer while you make filling.
Filling: Combine all filling ingredients in blender or food processor. Blend until completely smooth, stopping to scrape down sides as needed. Pour onto chilled crust and spread evenly to cover bottom. Place in freezer for 90 minutes to solidify.
Optional Raspberry Sauce: Blend raspberries and maple syrup. Store in fridge.
Remove cheesecake from freezer and cut into 8 bars. Enjoy by themselves or top with raspberry sauce, Claire's Goodness, or other toppings of choice if desired. Store bars in fridge.
