My Cranberry Cashew Energy Bites are just the thing to bring with! These nutrient packed bites give you all the convenience of an energy bar, but with only a handful of real, good-for-you ingredients. They pack a big punch of energy with the heavenly combination of cashews, cranberries, dates, and almond butter.

Even better, they are NO BAKE and ready in 10 minutes! So simple and delicious, these summery bites will be one of your new favorite on the go snacks.

Gluten Free, Paleo, Vegan, No Bake

Prep Time: 10 minutes
Makes: 8 bites

  • 1/4 Cup Almond Butter
  • 2-3 Medjool Dates (pitted)
  • 1/4 Cup Raw Cashews
  • 1/4 Cup Dried Cranberries
  • 3 Tbsp Almond Flour
  • 1 Tbsp Chia Seed
  • Pinch of Sea Salt
  • Shredded Coconut to roll in (optional)

Combine almond butter, dates, cashews, almond flour, and salt in small food processor. Pulse to chop into finer pieces, then add cranberries and chia seeds and pulse to form loose dough but not until completely smooth - they are best with a little crunchy texture from some cashew pieces ;)

Form dough into 8 tablespoon size balls and roll in shredded coconut if desired. Store in refrigerator.
