A superfood packed protein bar disguised as a magic bar? Sign me up! These no bake, paleo friendly bars have a collagen sugar cookie layer topped with a rich almond butter cacao caramel layer, with extra coconut and chocolate sprinkled on top!

They are high in protein, healthy fats, and fiber, while being relatively low in carbs and added sugars compared to your typical dessert or store bought energy bar. They contain a variety of different beneficial proteins from collagen, hempseed, and almonds.

These bars are truly the best of both worlds: They taste like dessert, they are super easy to make, and most importantly they are filling and packed with nutrients to energize you for your day! These will have everyone around you envious of your snacks ;)

Sugar Cookie Bar:
  • 1/4 Cup Claire's Goodness Almond Butter
  • 1/2 Cup Collagen Protein
  • 1/4 Cup Almond Flour
  • 2 Tbsp Pure Maple Syrup (Dark)
  • 3 Tbsp Hemp Seed
  • 3 Tbsp Shredded Coconut
  • Pinch of Sea Salt
Almond Butter Cacao Caramel:
  • 1 Tbsp Shredded Coconut
  • 2 Tbsp Cacao Nibs or Dark Chocolate Chips

Combine Sugar Cookie Bar ingredients in a food processor and blend to thoroughly mix. I like to leave a little texture from the coconut and hemp, but you can choose to blend until completely smooth if desired. Press dough into parchment paper lined bread pan and place in freezer.

Combine ingredients of Claire's Goodness almond butter cacao caramel in a saucepan over low heat. You are not cooking it, just using a little heat to ensure it is smooth. Once it is thoroughly mixed remove from heat and pour over the sugar cookie bar layer. Spread caramel evenly to the edges of the pan to cover the whole layer.

Sprinkle top with shredded coconut and cacao nibs or chocolate chips. Place pan back in freezer to set for 30 minutes. Remove from freezer and cut into 8 squares. Enjoy! Store in fridge.
