Carrot Cake Protein BitesDoes anyone else love the spiced yumminess of carrot cake? I absolutely love this savory sweet flavor combo, so I wanted to recreate it in the form of a healthier snack.
Enter Carrot Cake Protein Bites! These date sweetened bites contain all the amazing flavors of carrot cake without the refined sugars and other junk, and with an impressive amount of protein, fiber, healthy fats....plus some veggies ;)
They are a great energy bite to keep you or your kids going throughout your day, as well as a deliciously healthy dessert alternative. Plus, they are super easy and take 10 minutes to make.
The only thing missing is the cream cheese frosting!

Makes: 12 Bites
Gluten Free, Paleo, Raw, No Added Sugar, No Bake
⅔ Cup Shredded Carrot
¼ Cup Claire’s Goodness Almond Butter
2 Pitted Medjool Dates
5 Tbsp Vanilla Whey Protein (I use MorelliFit Grassfed Whey, this amount is equivalent to 2 scoops)
3 Tbsp Coconut Flour
¼ Tsp Cinnamon
1/8 Tsp Nutmeg
Handful of shredded coconut
Blend all ingredients in food processor until crumbly dough forms. Form into 12 tablespoon size balls. Roll in shredded coconut if desired. Enjoy right away or chill first if desired. Store in fridge.
**Note: If you would like to make this recipe vegan, you can use a plant based protein powder such as rice, pea, hemp, or a blended protein instead of whey protein powder. As plant based proteins tend to absorb more moisture, I would recommend starting with 3 Tbsp of powder instead of 5 Tbsp, then you can add more if desired. This will still give you plenty of protein! For example, the sprouted brown rice protein that I use actually contains a around the same protein in 3 Tbsp as my whey protein does in 5 tbsp, so it evens out.
