Spring is in full swing and this is the perfect breakfast to make those beautiful spring mornings even sweeter ;) Savor all the amazing flavors of carrot cake in this nutritious bowl full of protein, fiber, healthy fats, PLUS veggies to energize you for all your spring cleaning.

I especially love overnight oats because soaking them overnight makes them easier to digest. Just a few minutes to throw together the night before and your tasty breakfast will be ready to rock in the AM. Get your carrot cake on!

Chill Time: 8 hours
Makes: 1 serving

Ingredients:

Dry:
  • 1/2 Cup Oats
  • 1/4 Cup Shredded Carrot
  • 1-2 Tbsp Raisins
  • 1/2 Tbsp Chia Seed
  • 1/2 Tsp Cinnamon
  • 1/4 Tsp Pumpkin Pie Spice
  • 1 Tbsp Chopped Pecans or Walnuts
Wet:
  • 1/2 Serving Vanilla Protein
  • 1 1/4 Cup Water, Almond Milk, or other liquid of choice
  • 1 Tsp Vanilla
  • 1 Tbsp of Claire's Goodness Almond Butter
  • 1/2 Tbsp Maple Syrup or a few drops Liquid Stevia to taste

Instructions:

Mix together dry ingredients in a bowl or mason jar that can be covered.

Combine wet ingredients in a shaker cup or blender and mix until evenly combined. Pour over dry ingredients and stir together.

Cover and place in fridge overnight. Enjoy cold or warm in the AM!
