B.Y.O. Mini Sweet Potato Toast

'Tis the season for sweet potato! Always one of the best parts of thanksgiving dinner. Sweet potatoes in their natural state (aka not loaded with added sugar and marshmallows) are such a healthy, nutrient rich food.

One of my favorite ways to enjoy them lately is in the form of sweet potato toast drizzled with my Claire's Goodness almond butter. It is an absolutely heavenly combination ;) Top it off with a light sprinkling of shredded coconut, chopped nuts, seeds, berries, cacao nibs, etc and it is to die for!

These sweet potato toasts only take a few minutes to cook, and then you can just set out toppings for people to build their toast as desired. Less time in the kitchen and more time relaxing with the ones you love!

They are a perfect low calorie appetizer or healthy dessert option to enjoy with your thanksgiving feast, and any other time of the year!

Bake time: 10 Minutes
Makes: 20 Mini Toasts
Gluten Free, Paleo, Vegan, No Added Sugar

Ingredients:

1 Large Sweet Potato (I recommend using organic sweet potato as the skin of sweet potatoes absorbs pesticides and toxins used in conventional growing methods. And leave the skin on, it is the most nutritious part!)
1 Tbsp Coconut Oil (melted)
1/4 Cup Claire's Goodness Almond Butter
Sea Salt

Optional Topping Ideas:

Cinnamon
Coconut
Chopped Nuts
Seeds - Chia, Hemp, Sesame, Pumpkin, etc
Granola
Chocolate Chips or Cacao Nibs
Berries, Pomegranate Seeds, or Other Chopped Fruit
Dried Fruit

Instructions:

Preheat oven to 400. Cut sweet potato into circles about 1/4 inch thick. Toss in bowl with melted coconut oil to evenly coat, the place on baking sheet. Do not overlap pieces. Lightly sprinkle with sea salt.

Bake for 6-8 minutes until the rounds are starting to feel a little soft, then change oven to High Broil setting. Broil 1-2 minutes on each side to brown then remove from oven.

Toast can be eaten warm, or it is also great at room temperature or chilled - totally up to you! Drizzle toast with Claire's Goodness almond butter then add whatever additional toppings your heart desires.

(Just including the sweet potato, coconut oil, and Claire's Goodness almond butter. For additional toppings it will depend what you are using, but if you are just using small amounts of toppings it won't add up to much extra ;)
