Apple Pie Overnight OatsFall always puts me in the mood for fresh, juicy apples and that heavenly apple cinnamon combo that is in the ciders, pies, and other goodies this time of year! Besides the goodies, I always think of the instant apple cinnamon oatmeal that I used to love growing up.
I have been craving this apple cinnamon combo lately, so I created a healthier version that still has all the delicious flavor without all the added sugar, artificial ingredients, and refined oats in instant oatmeal. It is packed with protein, healthy fats, fiber, and complex carbs to fill you up and give you steady energy for the day.
Overnight oats are a great alternative to cooked oats because it has that much more time to soak up all the amazing flavors! You can enjoy them hot or cold, they are delicious both ways ;)

Soak Time: 8-10 hours
Makes: 1 Serving
Gluten Free, Raw, No Added Sugar
- 1/2 Cup Gluten Free Old Fashioned or Steel Cut Oats
- 1 Tbsp Hemp Seed
- 1/4 Tsp Cinnamon
- 1/16 Tsp Nutmeg
- 13g Vanilla Protein - about 1/2 - 1 full scoop depending on the serving size of your protein powder (I use MorelliFit Grass-Fed Whey Isolate - this is 1 scoop)
- 3/4 Cup Water
- 2 Tbsp Finely Chopped Apple
- 1 Tbsp Claire's Goodness Almond Butter
- Dash of Vanilla
- Stevia or other sweetener to taste
Pour oats, hemp seed, cinnamon, and nutmeg into bowl or jar that can be covered. Stir to mix ingredients together.
Mix protein powder and water cup with shaker cup or your preferred method until fully combined. Pour shake over oat mixture and stir to combine. Mix in apple, Claire's Goodness almond butter, and dash of vanilla, then add extra stevia or other sweetener if desired.
Cover bowl and place in fridge overnight, for 8-10 hours. In the morning it is ready to eat cold or you can heat it up. Drizzling with extra Claire's Goodness almond butter is highly recommended ;)
