These delightful bars are held together with my sprouted Claire's Goodness almond butter, pure dark maple syrup, and coconut oil for the perfect nutty caramel flavor. The addition of dried currants adds the perfect pop of extra flavor, and they get some added texture from chia seeds. Feel free to mix in any other ingredients that sound good to you!
With no baking required, these crispy treats are just about the easiest thing to make. It just takes a little patience waiting for them set in the freezer.....I have to admit sometimes I just eat the batter with a spoon ;)

Gluten Free, Vegan, No Bake
- 1/4 Cup Claire's Goodness Almond Butter
- 2 Tbsp Pure Maple Syrup (Dark)
- 1 Tbsp Coconut Oil
- 1 1/2 Cups Crispy Rice Cereal (I use One Degree Veganic Sprouted Brown Rice Crisps)
- 2 Tbsp Dried Currants
- 1 Tbsp Chia Seed
Mix Claire's Goodness Almond Butter, Maple Syrup, and Coconut Oil over low heat until smooth. Remove from heat and stir in remaining ingredients.
Press into parchment paper lined loaf pan and place in freezer for 20-30 minutes to set. Remove from freezer and cut into 6 bars. Drizzle with extra Claire's Goodness almond butter if desired and enjoy ;) Store in the fridge.
