AB & J Protein Bites

In case you haven’t heard, AB & J is the new PB & J.

These nutrient-packed AB & J Protein Bites are my favorite go to snack lately! They have the perfect touch of natural sweetness and are full of protein, fiber, and healthy fats to keep me going. Plus they are super quick to put together.

I love to have these tasty bites with me on the go, as well as in my fridge at home for a healthy treat to grab.

Prep Time: 10 minutes

Makes Approximately: 12 balls

Ingredients:

  • ¼ Cup Claire's Goodness Almond Butter
  • 2 Tbsp Jam of Choice (I use Trader Joe’s Organic Reduced Sugar Raspberry Preserves)
  • 1 Tbsp Coconut Oil
  • 3 Tbsp Vanilla Whey Protein (I use MorelliFit Vanilla Grass-Fed Whey Isolate)
  • 2 Tbsp Coconut Flour
  • 1 Tbsp Almond Flour
  • 2 Tbsp Chia Seeds
  • Handful of Unsweetened Shredded Coconut

 

Directions:

In a large bowl mix your Claire's Goodness almond butter, jam, and coconut oil until it is smooth. Once combined, stir in your remaining ingredients.

Form your mixture into rounded teaspoon-sized balls.

Then, on a plate sprinkle your shredded coconut. Roll each ball around on the plate, so the shredded coconut evenly coats the entire ball.

Now, your AB & J Protein Bites are ready to eat right away or to be stored in the refrigerator for later.
